When I was pregnant, I craved nostalgic flavors and foods I hadn’t eaten since I was a kid. One of the dishes that got the most rotation was goulash, sometimes called American Chop Suey.
My mom made this quite a bit when I was growing up, because it’s fast, cheap, and pretty healthy as far as fast and cheap food goes. One recipe makes a lot of food for a big family, or can be easily frozen for a small family.
Basic Goulash Recipe
Ingredients
- 1 lb elbow macaroni
- 1 lb ground beef
- 1 can (14.5 oz.) diced tomatoes
- ½ onion, diced
- 1 green pepper, diced
- 1 tsp minced garlic
- grated parmesan cheese
Recipe
- Brown the ground beef. Drain if needed. Move beef to a bowl.
- In the same pan, saute the garlic, onion, and green pepper for 3-5 min.
- While the beef is cooking, boil the pasta.
- Add the cooked pasta to the browned beef.
- Add in tomatoes. Stir.
- Sprinkle with parmesan. Curl up some place cozy and enjoy.
Other Variants on Goulash
- Use fun pasta shapes, like cavatappi.
- Use ground turkey, lamb, or buffalo.
- Use condensed tomato soup instead of diced tomatoes.
- Add a touch of cinnamon (my husband does this!)
